Apple cinnamon upside down cake
Make the cake batter:
1 and 1/2 cups of flour
1 cup of sugar
1 tsp cinnamon
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tsp vanilla
1/2 cup apple sauce
1/2 cup orange juice
In a large bowl combine the dry ingredients.
In a small bowl mix together the last four (wet) ingredients - beat well with a fork for a minute.
Fold the wet ingredients into the dry - until fully combined being careful not to over mix.
3 (or so) apples peeled, cored and sliced into thin slices.
4 tbsp butter
1/2 cup packed brown sugar
Preheat oven to 350
Place 4 tbsp butter in a glass 9x9 baking dish and microwave until the butter is melted.
Add brown sugar.
Mix until combined and a thin layer covers the bottom of baking dish.
Place the apples in a single layer covering the bottom of the baking dish.
Pour batter over the top.
Bake for 45-50 minutes - until a fork comes out clean.
Let cool for 10 minutes.
Place a plate on top of the baking dish and invert very quickly so the cake falls upside down on the plate. Remove the baking dish.
